The Eemeli filleting knife is designed specifically for Finnish freshwater fish, such as whitefish, perch, trout, and pike. Its highly flexible blade ensures ease in handling, allowing it to bend along its entire length. This design facilitates the precise cutting of ribs and skin without wasting any of the fish's flesh. 

 

The round handle of the Eemeli is made from oiled curly birch, offering a comfortable grip. The sheath is crafted from light-colored leather, decorated with a cut-out fish pattern.
